Celery has a long fibrous stalk tapering into leaves. Depending on location and cultivar, either its stalks, leaves or hypocotyl are eaten and used in cooking. Celery seed powder is used as a spice. Celery is loaded with antioxidants. These include well-known varieties such as flavonoids and vitamin C, as well as lunularin and bergapten. These and other antioxidants help to prevent the oxidative stress that contributes to cancer. Celery is rich in a phytochemical known as phthalides.
